Friday January 16, 2026, part of the Bordeaux Confidentiel team gathered around a dessert we thought almost too tame to become a competition subject: the flan pâtissier. And yet. That day, Bordeaux played the game of the best flan in Bordeaux contest, organized by Le Canard Bordelais, a local media particularly active when it comes to spotlighting the city's artisans and sweet know-how.
The idea is simple, almost obvious: gather several flans, compare them, taste them, analyze them, then decide. But behind this apparent simplicity hides a real taste exercise. The flan, more than any other dessert, doesn't cheat. Few ingredients, few artifices, everything plays on texture, cooking, aromatic balance and gesture precision.
A contest that speaks textures first
On site, the atmosphere was studious but joyful. Here, no flashy staging or unnecessary speeches: the flan was at the center. Tastings followed one another, revealing surprising diversity of styles. Some flans showed almost architectural hold, others favored melting. The doughs varied, more or less thin, more or less crunchy. Creams oscillated between assumed vanilla intensity and more discreet milky sweetness.
Even without rules published in black and white, tasting criteria imposed themselves, as in all recognized French flan contests:
visual aspect, cooking regularity, texture on cutting, creaminess in the mouth, and of course aromatic balance. Every bite called the next, every flan told a different interpretation of the same classic.
What struck most was the place given to tasting time. Here, we took time to compare, go back to a slice, discuss sensations and impressions. A real gastronomy moment, around a dessert we too often eat without paying attention.
The flan, symbol of a return to grace
This Bordeaux contest doesn't come from nowhere. It fits a wider movement: that of the flan's return to the pastry scene's front, visible nationally through dedicated contests and growing media coverage of this dessert long considered « simple ».
In Bordeaux, Le Canard Bordelais's initiative mostly created a unifying, accessible, sweet, deeply local moment. The flan becomes a pretext to meet, to talk pastry without excessive jargon, to value houses working this classic with seriousness and demand.
After deliberations, one flan stood out for the jury gathered for the event: Beligius's, officially elected best flan in Bordeaux for this edition. An assumed title, relayed afterwards, which immediately fed discussions, comparisons and tasting wishes in town. In 2nd place, Vanille Lina delighted our taste buds and, in 3rd place, Quatre Quart with a fantastic flan…
Beyond the ranking, this day mostly reminded us of one essential thing: pastry, even in its most refined form, can become a passionate playground. The flan, daily dessert, reveals an artisan's full know-how as soon as you take time to observe it, cut it, taste it truly.
