Le Chiopot: we almost celebrated 100 years with a Limousin ribeye and an imposing turbot

There are addresses you keep putting off. Not because you don't want to - quite the opposite. You keep them in a corner of your head like a promise to yourself. Le Chiopot was that. A Bordeaux institution founded in 1927 you've heard about for years, that comes up in table conversations, and that you'd never really taken the time to test seriously. So when the 100-year mark approached, part of the Bordeaux Confidentiel team didn't want to miss the event!

A house that doesn't need to justify itself… Far from it!

Le Chiopot is in Bègles, not in central Bordeaux (but not far). And that's precisely what gives it character. No stray tourists, no packed terrace between two fast-foods. A quiet neighborhood, parking, an address you don't find by chance but because you looked for it.

The interior plays a well-measured modern card: bottle wall, cared-for tables, warm light. The place has the serenity of houses that crossed trends without overdoing it and keep welcoming guests like regulars - even when it's the first time. Service is in the same register: attentive, efficient, without cold distance or forced familiarity.

What we ate, what we remembered?

We're not here to list dishes. But two moments marked the evening. The whole turbot, presented on a wooden board, garnished with herbs and little petals - when it arrived at the table, the conversation stopped. It's the kind of dish you look at before eating. And the Limousin ribeye, sliced and served with tongs: perfect cooking, breed meat that reminds you what real beef flavor is.

On the cellar side, Le Chiopot doesn't joke around. Several hundred references, a serious selection. That night: a Château Brown Pessac-Léognan white 2023 in magnum to go with the fish, then a Terre du Château Brown red 2023 for the meat. A coherence in the choices that gives away a truly thought-out cellar.

And to finish - the lost brioche. It has a reputation. It's deserved.

So do we go back?

Le Chiopot isn't a restaurant trying to wow with avant-garde techniques. It's a house that knows what it is, does it well, and lasts almost a century for that precise reason. You don't go there to discover - you go there to remember what a truly well-made meal, with truly good products, looks like.

A hundred years soon. And clearly, they don't plan to stop there. AND ALL THE BETTER!
