Chez Fabrice, a new food gem in the heart of Bordeaux

We tested and we loved it (straight to the point!). Since its recent opening at 32 rue de Cursol in Bordeaux, Chez Fabrice has quickly become an address you cannot miss if you love honest cooking, mastered and full of creativity.

From the first steps into the dining room, the warm and welcoming atmosphere sets the tone: a polished decor, around forty seats well laid out, and that reassuring feeling of being at the home of someone who loves hosting.

Cooking that excites the taste buds

What strikes you straight away at Chez Fabrice is the chef's ability to play with textures and colours, without ever losing sight of the finesse of taste. His menu, moving between French classics and bolder touches, shows real technical mastery and a stimulating creative freedom.

We moved effortlessly from a stunning amuse-bouche: a homemade hummus, lemony, light and perfectly balanced, a real rediscovery of this classic, opening the appetite straight away. To the chef's surprise: a seared sweetbread, just cooked, melting and tasty… so good that I caught myself thinking: « How does Fabrice know we love sweetbread? »

Dinner carried on in a fine harmony of flavours. We followed with a perfectly executed steak-frites, then a half red-juicy duck magret, served with a crispy potato galette and a roquefort sauce that made the whole thing sing. Each dish showed a precise balance between textures, colours and taste, revealing a cooking that is both inspired and mastered.

On desserts, to finish the meal with elegance:

  • Coffee tiramisu, light and fragrant,
  • Homemade profiteroles, coated in chocolate and served with airy whipped cream.

A delicious ending, like a greedy cherry on a plate that was already very generous.

Impeccable service, a captivating chef

What makes the experience even more memorable is the attention given to the service (thank you Thomas!). The staff is attentive, present without being everywhere, and knows their stuff, which changes everything when you let yourself be guided on food and drink pairings. And then there is Fabrice himself: friendly, passionate, tuned in to customer feedback and always ready to share an anecdote or a dish explanation. You almost want to say he deserves a star straight away, just for this sincere connection between the kitchen and the dining room.

A final word (and appetite)

At Chez Fabrice, you don't just come to eat a good meal: you come to live a full culinary experience, where every plate tells a story, where the taste buds dance between French traditions and more « global » influences, and where the welcome is a full part of the pleasure.

Whether for a romantic dinner, a meal with friends or simply a wish to eat well in a place where you feel good, this venue clearly deserves the detour (and a return visit). We loved it and will be back soon to see Fabrice and his team just to enjoy ourselves again.
